I thought I’d make the first post a simple one just to get us started. I felt like a light dinner tonight so thought I might give one of the many couscous salads a go. Here is my take on Jamie’s green/greek salad.
1. I blended coriander, mint, a tiny bit of capsicum, salt, chilli and pepper.
2. In went the couscous and hot water. I left this mix to stand for about 6-7 minutes.
3. And there we have it folks. Green (as I call it) couscous. Simple. Colourful. Delish.
I had it with some chicken nibbles for a light and refreshing dinner.
This salad was a bit too herby for me but thats probably because I added coriander (me being Indian, I just couldnt resist!!). Next time I’ll take the capsicum out, reduce the amount of coriander and add in some baby spinach.
