If Jamie Oliver can come up with 15 minute meals surely I can too? Only I don’t have Jamie’s well stocked pantry with every ingredient under the sun. What I have is some leftovers and a lazy attitude.
And out of that was born miso beetroot and brown rice with some salad!
Now I bought some lovely beetroot at the local markets over the weekend. They were ‘fresh’ with tails, whiskers and stalks. It took me a good 20 minutes just to peel and slice 4 beetroot. It also gave me pink hands! Of course you can just use canned beetroot which is why I haven’t included this prep time in the recipe.
To start with, the brown rice goes into the rice cooker since it takes ages to cook.
I then add some ginger, garlic and green chilli to hot oil.
This is followed by one sliced onion. I cooked the onion for 5 minutes or so. I then added in the chopped beetroot (along with half a sad carrot I found in the veggie basket) I also added some water to help cook the beetroot.
As it was cooking, I added three packets of miso paste
Stir it all together and let it cook. Meanwhile, I threw together a salad with some leftover rocket and spinach. I topped it with a few pieces of beetroot and it was done!
At this point I tasted the beetroot and decided it needed some chilli so a liberal sprinkling of chilli flakes went into the pan
Miso beetroot is ready!
This recipe was invented on the go and I think its turned out very well!
